Salcombe Distilling Co. has announced the release of their limited edition cask-aged gin ‘Finisterre’ just in time for Christmas. This exquisite gin was so popular when it was first released, so they’ve produced a further edition for their Victuallers Edition series.
This batch of ‘Finisterre’ has been aging in an American oak Fino sherry cask since its last release in 2018. Over the last three years, it has mellowed and sweetened, while still holding onto its defining characteristic of a salty finish from the sherry.

Finisterre is a super premium gin inspired by a renowned 19th century trading route of the Salcombe Fruit Schooners, takes its name from a rock-bound peninsula on the West Coast of Spain. This collaboration with Bodegas Tradición, one of the most respected sherry houses in Spain renowned for its aged wines using traditional methods, reawakens a bygone era of adventure and trade, connecting Cadiz with England as the Schooners passed by this Galician outcrop.
When it first launched, Lorenzo Garcia-Iglesias, general manager of Bodegas Tradición commented: “We share the same passion and dynamism as Salcombe Distilling Co. to only create exceptional produce, so were delighted they selected one of our beautiful casks in which to age their fantastic gin.”
Co-founder of Salcombe Distilling Co. Angus Lugsdin says: “We were honoured to work with the prestigious Bodegas Tradición to create this limited batch of cask aged gin. The fresh citrus notes are tempered through the cask maturation process which takes has taken three years, creating wonderful candied citrus aromas and moreish saline notes from the aged Fino. The result is a sophisticated and elegant gin with great character and depth of flavour.
Taste Profile
Nose – An aroma of sweet candied citrus, including orange blossom and an enticing salty note from the aged Fino.
Palate – A taste of dried citrus peel, warm fruit and a dry finish.
Finish – This sophisticated and elegant gin has great character and flavour, and the Fino sherry adds a layer of complexity and a hint of spice. The salty notes of the Fino sherry are more pronounced than in prior years.
